Although many people know that egg yolks are high in protein and cholesterol, they are often overlooked as a highly nutritious food source high in certain vitamins, minerals and other nutrients. Egg yolks contain different nutrients than egg whites, which are less nutrient-dense than yolks. In a single egg yolk you can get more than 1400 IU of vitamin A, 85 IU of vitamin E, 300 micrograms of retinol, 80 micrograms of beta-carotene and 100 micrograms of lutein. Eating eggs regularly can provide you with a sufficient amount of these nutrients.

Eggs are high in vitamin A, which helps promote proper blood flow in the body and supports collagen production in skin. Eggs also contain beta-carotene, which can improve night vision and help your body fight off infections more quickly. The vitamin E in eggs can improve red blood cell formation and heart health. Retinol boosts the immune system and promotes healthy skin cell turnover. Lutein is beneficial to eye health and promotes good vision.
Dietary Options
Egg yolks can be consumed in a wide variety of ways, and are a very versatile food that can be added to many recipes. Scramble or fry egg yolks along with the egg whites for a nutrient-rich simple meal. Add egg yolks into baked recipes to create richer and denser baked goods. Whip egg yolk together with oil and anchovies to create a homemade Caesar salad dressing.
Considerations
Raw eggs occasionally contain salmonella bacteria, which is harmful to health and can even cause severe food poisoning and death. Consult your medical or holistic doctor before eating large quantities of egg yolks, as some health conditions can worsen as a result, such as in people with high cholesterol. Your doctor can determine whether adding egg yolks to your diet is appropriate and healthful for you.
